A delightful breakfast or snack of fluffy pancake “bites” made effortlessly in the air fryer, studded with mini chocolate chips—perfectly portioned, quick, and fun to enjoy.
Ingredients
1 cup pancake mix
1 cup water
½ cup mini chocolate chips
Instructions
In a large bowl, whisk together the pancake mix and water until smooth and free of lumps.
Fold in the mini chocolate chips until evenly distributed throughout the batter.
Generously spray a silicone egg bite mold (or similar) with olive oil or non-stick cooking spray.
Fill each mold cavity about two‑thirds full with the pancake batter.
Place the mold in your air fryer basket or tray and air-fry at 320 °F (160 °C) for approximately 5 minutes—or until golden brown and cooked through. Cooking time may vary depending on your air fryer model, so check midway and adjust if needed.
Carefully remove the pancake bites and allow them to cool for a minute or two before serving.
