Description
A tender, flavorful pot roast made quickly in the air fryer, featuring juicy beef with caramelized edges and perfectly cooked baby carrots and potatoes. This recipe offers a convenient and delicious twist on the classic pot roast using minimal ingredients and simple steps.
Ingredients
Beef and Seasoning
- 2 to 2 1/2 pounds chuck roast
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme or rosemary
- Salt and black pepper to taste
Vegetables and Broth
- 1 cup baby carrots
- 1 cup baby potatoes, halved
- 1/2 cup beef broth
Instructions
- Preheat Air Fryer: Preheat your air fryer to 360°F (180°C) to ensure it’s ready for cooking the roast evenly.
- Prepare the Roast: Pat the chuck roast dry with paper towels. Rub it evenly with olive oil, then season with garlic powder, onion powder, your choice of dried thyme or rosemary, and salt and black pepper to taste.
- Initial Air Frying: Place the seasoned roast in an air fryer-safe pan. Cook in the air fryer for 25 minutes, flipping the roast once halfway through to promote even browning and caramelization on both sides.
- Add Vegetables and Broth: Arrange the baby carrots and halved baby potatoes around the roast in the pan. Pour the beef broth over and around the ingredients to keep everything moist.
- Continue Cooking: Return the pan to the air fryer and cook for an additional 20 to 25 minutes. Check that the roast is tender and has reached your desired level of doneness.
- Rest and Serve: Remove the roast from the air fryer and let it rest for 10 minutes. This allows the juices to redistribute. Slice the roast thinly against the grain before serving with the cooked vegetables.
Notes
- Use a foil-lined pan or an air fryer basket liner for easy cleanup.
- For extra tenderness, slice the meat thinly against the grain.
- You can substitute dried rosemary with thyme depending on your preference.
- Monitor the cooking time as air fryer models may vary slightly in cooking power.
