Description

Ingredients

For the Bread:

Nonstick cooking spray (for greasing the pan)

1/3 cup light brown sugar

2 tsp ground cinnamon

2 apples (any variety), peeled and chopped

2/3 cup + 2 tbsp granulated sugar

1/2 cup (1 stick) butter, softened

2 large eggs

1 1/2 tsp vanilla extract

1 1/2 cups all-purpose flour

1 3/4 tsp baking powder

1/2 cup + 1 to 3 tbsp milk (or almond milk)

For the Glaze:

1/2 cup powdered sugar

Milk (to achieve drizzling consistency)


Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with nonstick cooking spray.

Prepare the Cinnamon Sugar and Apples: In a small bowl, mix the light brown sugar and ground cinnamon. Set aside. Toss the chopped apples in 2 tablespoons of granulated sugar and set aside.

Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and remaining granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and a pinch of salt.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

Layer the Bread: Spread half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Layer half of the chopped apples on top. Repeat with the remaining batter, cinnamon sugar, and apples.

Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Glaze: Allow the bread to cool in the pan for 10 minutes before removing it to a wire rack to cool completely. In a small bowl, mix the powdered sugar with enough milk to create a drizzle consistency. Drizzle the glaze over the cooled bread.
