Description

A comforting and soothing Asian rice porridge, also known as Juk or Congee, simmered until creamy and perfect for breakfast or as a healing meal. This simple and versatile dish can be customized with a variety of toppings like green onions, soy sauce, boiled eggs, and shredded chicken for added flavor and nutrition.

Ingredients

Base Ingredients

  • 1 cup rice
  • 8 cups water or broth
  • 1 tsp salt

Optional Toppings

  • Chopped green onions
  • Soy sauce, to taste
  • Boiled eggs, peeled and halved
  • Shredded cooked chicken
  • Drizzle of sesame oil

Instructions

  1. Rinse the rice: Thoroughly rinse 1 cup of rice under cold water until the water runs clear to remove excess starch, which helps create a smoother porridge texture.
  2. Combine with liquid: In a large pot, add the rinsed rice and 8 cups of water or broth for richer flavor. Stir in 1 teaspoon of salt to season the base.
  3. Simmer: Place the pot over medium heat and bring to a gentle boil. Then reduce heat to low and let it simmer uncovered for 50 to 60 minutes, stirring occasionally to prevent rice from sticking to the bottom and to break down the grains, creating a creamy consistency.
  4. Check consistency: The porridge should be thick yet smooth when done. If you prefer thinner porridge, add a little more hot water or broth and stir until incorporated.
  5. Season and garnish: Taste and adjust seasoning if needed. Serve hot, topped with optional ingredients like chopped green onions, soy sauce, boiled eggs, shredded chicken, and a drizzle of sesame oil for enhanced flavor.

Notes

  • For added depth, incorporate shredded chicken or sliced mushrooms during the last 10 minutes of cooking.
  • Using an Instant Pot can reduce cooking time significantly; cook on high pressure for about 20 minutes with a natural pressure release.
  • Enjoy variations by adding ginger, garlic, or other seasonings according to preference.
  • This dish is naturally gluten-free, but ensure toppings like soy sauce are gluten-free versions if needed.
