Ingredients
Main Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups cauliflower rice
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ tsp paprika
- Salt and pepper, to taste
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C). Grease a baking dish to prevent sticking and prepare for baking later.
- Cook the Beef and Onion: Heat olive oil in a skillet over medium heat. Add the ground beef and diced onion to the skillet. Cook and stir until the beef is fully browned and the onions are softened, ensuring no pink remains.
- Add Garlic: Stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
- Combine Ingredients: Add the cauliflower rice into the skillet. Mix in the sour cream, shredded cheddar cheese, paprika, salt, and pepper, stirring well to combine all ingredients evenly.
- Transfer and Bake: Pour the mixture into the prepared baking dish, spreading it out evenly. Place the dish in the preheated oven and bake for 25 to 30 minutes, or until the casserole is bubbly and the top is lightly golden.
- Rest and Serve: Remove the casserole from the oven and allow it to rest for a few minutes to set. Serve warm and enjoy your comforting low-carb casserole.
Notes
- Add diced bell peppers or mushrooms to increase the veggie content and add extra flavor.
- Swap out cheddar cheese for mozzarella or pepper jack to give the dish a different cheese profile.
