Description

This beef and green bean stir-fry is a quick and savory Asian-inspired main course that features tender, thinly sliced flank steak and crisp green beans. The dish is enhanced with a homemade soy-based sauce, making it a delicious and healthy alternative to takeout favorite stir-fries.

Ingredients

Beef and Vegetables

  • 1 lb flank steak, thinly sliced against the grain
  • 2 tbsp vegetable oil
  • 3 cups fresh green beans, trimmed
  • 3 cloves garlic, minced

Sauce

  • ¼ cup soy sauce or tamari
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch
  • ½ cup water

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce or tamari, brown sugar, cornstarch, and water until smooth. Set the sauce mixture aside while you cook.
  2. Heat the oil: Place a skillet or wok over high heat and add the vegetable oil. Allow it to get hot but not smoking.
  3. Cook the beef: Add the thinly sliced beef to the hot skillet and stir-fry quickly until it is browned on all sides, about 2-3 minutes. Remove the beef from the pan and set aside to prevent overcooking.
  4. Cook the green beans and garlic: In the same skillet, add the green beans and minced garlic. Stir-fry for 3 to 4 minutes until the green beans are crisp-tender, maintaining their bright color and crunch.
  5. Combine beef and sauce: Return the cooked beef to the skillet with the green beans. Pour in the prepared sauce and stir everything together thoroughly.
  6. Thicken the sauce: Continue cooking while stirring until the sauce thickens and evenly coats the beef and green beans, about 1 to 2 minutes.
  7. Serve hot: Remove from heat and serve the stir-fry immediately, ideally over steamed rice or cauliflower rice for a complete meal.

Notes

  • Slice the beef thinly against the grain to ensure tenderness.
  • For extra flavor, add chili flakes or fresh grated ginger when stir-frying the green beans and garlic.
  • This stir-fry pairs wonderfully with steamed jasmine rice or low-carb cauliflower rice.
