Description

All the flavors of traditional stuffed cabbage rolls without the rolling! This hearty one-pot casserole combines ground beef, cabbage, rice, and tomato sauce for a comforting and easy meal that’s perfect for busy weeknights.

Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • 1 small head cabbage, chopped
  • 1 onion, diced

Tomato and Rice

  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) diced tomatoes
  • ½ cup uncooked rice

Seasonings

  • 1 tsp paprika
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Brown the beef and onion: In a large pot or skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
  2. Add the tomato base and rice: Stir in the tomato sauce, diced tomatoes (with juices), uncooked rice, paprika, salt, and black pepper. Mix until well combined.
  3. Incorporate the cabbage: Add the chopped cabbage to the pot, stirring to evenly combine it with the meat and tomato mixture.
  4. Transfer and bake: Pour the entire mixture into a baking dish and cover tightly with a lid or aluminum foil. Bake at 375°F (190°C) for 45 minutes, or until the rice is tender and the cabbage is cooked through.
  5. Serve: Remove from the oven, stir gently to combine, and serve warm. For extra flavor, consider adding a dash of vinegar just before serving.

Notes

  • Add a dash of vinegar for a tangy finish.
  • Use ground turkey instead of beef for a lighter version.
  • To make this gluten-free, verify that the tomato products do not contain any gluten additives.
  • Brown the meat thoroughly to enhance flavor and reduce grease.
  • Ensure the baking dish is well covered to keep moisture in during baking.
