Instructions

  1. Brown the Beef: Heat oil in a large pot over medium-high heat, then add the beef stew meat. Brown the meat on all sides for about 5-7 minutes to develop flavor.
  2. Sauté Onion: Add the chopped onion to the pot with the browned beef. Cook for 5-6 minutes until the onion becomes soft and translucent.
  3. Add Aromatics and Spices: Stir in the minced garlic, grated ginger, curry powder, ground cumin, and ground coriander. Cook for 1-2 minutes until fragrant, stirring frequently to toast the spices gently.
  4. Add Liquids: Pour in the coconut milk, beef broth, and add the tomato paste. Stir everything together to combine well.
  5. Simmer the Curry: Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and cook for 1½ to 2 hours, stirring occasionally, until the beef is tender and the flavors have melded.
