Ingredients
Cornbread Base
- 1 box cornbread mix
- 1 egg
- ⅓ cup milk
- 1 (15 oz) can cream-style corn
Beef Topping
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup enchilada sauce
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven: Set your oven temperature to 400 °F (204 °C) and allow it to fully heat while preparing the ingredients.
- Prepare the cornbread batter: In a mixing bowl, combine the cornbread mix, 1 egg, ⅓ cup milk, and the entire can of cream-style corn. Stir until the batter is smooth and well incorporated.
- Bake the cornbread base: Grease a baking dish, pour in the cornbread batter evenly, and place it in the oven. Bake for 15 minutes until the edges are set but the top is not fully browned.
- Cook the beef mixture: While the cornbread bakes, brown the ground beef in a skillet over medium heat. Drain any excess fat, then add the taco seasoning and enchilada sauce. Stir and cook until the beef is fully seasoned and heated through.
- Assemble the casserole: Remove the partially baked cornbread base from the oven. Spoon the seasoned beef mixture evenly over the top of the cornbread layer. Then sprinkle shredded cheddar cheese over the beef layer.
- Bake until cheese melts: Return the assembled dish to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.
- Serve and enjoy: Remove from oven and allow to cool slightly before serving. This casserole goes great with a side salad or fresh salsa.
Notes
- Add chopped jalapeños or hot sauce into the beef mixture for extra spiciness.
