Description
Juicy beef tenderloin tips simmered in a rich, savory mushroom gravy—perfect served over mashed potatoes, noodles, or rice.
Ingredients
Beef and Seasoning
- 1 lb beef tenderloin tips
- Salt and pepper, to taste
- Oil or butter for searing
Vegetables
- 2 cups mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
Sauce
- 2 tbsp flour
- 1 cup beef broth
- 1/2 cup cream or half-and-half
- 1 tbsp Worcestershire sauce
Instructions
- Sear the Beef: Heat oil or butter in a skillet over medium-high heat. Add the beef tenderloin tips and sear until browned on all sides. Remove the beef from the pan and set aside.
- Sauté Vegetables: In the same pan, add the sliced mushrooms, diced onion, and minced garlic. Cook until the mushrooms are browned and the onions are translucent, about 5-7 minutes.
- Add Flour: Sprinkle the flour over the sautéed vegetables and stir constantly for about 1 minute to cook off the raw flour taste and create a roux base for the gravy.
- Deglaze and Add Liquids: Slowly whisk in the beef broth and Worcestershire sauce to the pan, scraping up any browned bits from the bottom. Stir well to combine and bring to a gentle simmer.
- Add Cream and Thicken: Pour in the cream or half-and-half and continue to simmer the sauce until it thickens to a gravy-like consistency, about 3-5 minutes.
- Return Beef and Simmer: Return the seared beef tenderloin tips to the pan with the mushroom gravy. Simmer gently until the beef is tender and heated through, an additional 5-7 minutes. Adjust salt and pepper to taste.
- Serve: Serve the beef tenderloin tips in mushroom gravy over mashed potatoes, noodles, or rice for a hearty meal.
Notes
- Substitute sirloin tips for a more budget-friendly option without sacrificing flavor.
- Add fresh thyme or rosemary during the sautéing step for added aroma and depth.
- This dish pairs well with creamy mashed potatoes or buttered egg noodles.
