Description

These brownie bites with whipped caramel ganache are rich, fudgy, and topped with a light, fluffy caramel frosting. Perfect for parties or when you have a sweet craving, these bite-sized treats combine the classic deep chocolate flavor of brownies with a smooth, creamy caramel topping.


Ingredients

Brownie Bites

  • 1 cup brownie batter (homemade or boxed)

Whipped Caramel Ganache

  • ½ cup heavy cream
  • ½ cup caramel chips or soft caramels
  • 2 tbsp butter


Instructions

  1. Preheat and prepare pan. Preheat your oven to 350°F (175°C) and grease a mini muffin pan thoroughly to prevent sticking.
  2. Fill muffin cavities with batter. Spoon the brownie batter into each muffin cavity, filling them halfway to allow space for rising.
  3. Bake the brownie bites. Bake in the preheated oven for 10–12 minutes, or until the brownies are set but still fudgy. Remove and allow to cool completely.
  4. Make the caramel ganache. Heat the heavy cream until steaming but not boiling, then immediately pour it over the caramel chips and butter in a heatproof bowl.
  5. Combine ganache ingredients. Let the mixture sit for 2 minutes to melt the caramel, then stir gently until smooth and fully combined.
  6. Chill the ganache. Place the ganache in the refrigerator until it thickens enough to whip, usually around 30 minutes.
  7. Whip the ganache. Using a mixer, whip the chilled ganache until it becomes light, fluffy, and spreadable.
  8. Top the brownie bites. Pipe or spoon the whipped caramel ganache generously onto each cooled brownie bite.

Notes

  • Do not overbake brownies to keep them fudgy and moist.
  • Ganache can be made ahead of time and kept refrigerated until needed.
  • For an extra touch, sprinkle sea salt on top of the ganache for a sweet-salty contrast.
