Ingredients
Brownie Bites
- 1 cup brownie batter (homemade or boxed)
Whipped Caramel Ganache
- ½ cup heavy cream
- ½ cup caramel chips or soft caramels
- 2 tbsp butter
Instructions
- Preheat and prepare pan. Preheat your oven to 350°F (175°C) and grease a mini muffin pan thoroughly to prevent sticking.
- Fill muffin cavities with batter. Spoon the brownie batter into each muffin cavity, filling them halfway to allow space for rising.
- Bake the brownie bites. Bake in the preheated oven for 10–12 minutes, or until the brownies are set but still fudgy. Remove and allow to cool completely.
- Make the caramel ganache. Heat the heavy cream until steaming but not boiling, then immediately pour it over the caramel chips and butter in a heatproof bowl.
- Combine ganache ingredients. Let the mixture sit for 2 minutes to melt the caramel, then stir gently until smooth and fully combined.
- Chill the ganache. Place the ganache in the refrigerator until it thickens enough to whip, usually around 30 minutes.
- Whip the ganache. Using a mixer, whip the chilled ganache until it becomes light, fluffy, and spreadable.
- Top the brownie bites. Pipe or spoon the whipped caramel ganache generously onto each cooled brownie bite.
Notes
- Do not overbake brownies to keep them fudgy and moist.
- Ganache can be made ahead of time and kept refrigerated until needed.
- For an extra touch, sprinkle sea salt on top of the ganache for a sweet-salty contrast.
