Ingredients
1 small head of cabbage, shredded
2 carrots, diced
2 celery stalks, diced
1 onion, finely chopped
3 cloves garlic, minced
1 can (14 oz) diced tomatoes
6 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Step 1: Sauté the Aromatics
In a large pot, heat olive oil over medium heat.
Add the chopped onion and minced garlic. Sauté for 3-4 minutes until fragrant and translucent.
Step 2: Add Vegetables
Add the diced carrots and celery to the pot and cook for another 3-4 minutes until slightly softened.
Step 3: Simmer the Soup
Stir in the shredded cabbage, diced tomatoes (with juices), vegetable broth, dried thyme, and dried oregano.
Season with salt and pepper to taste.
Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the vegetables are tender.
Step 4: Adjust Seasoning and Serve
Taste the soup and adjust seasoning if needed.
Serve hot, garnished with fresh parsley if desired.
