A rich, creamy, and spicy pasta casserole featuring tender chicken and melting cream cheese for a cozy family meal.
Ingredients
2 cups penne or rigatoni pasta (uncooked)
1 lb (450 g) boneless skinless chicken breast, cubed
1 tablespoon Cajun seasoning (more to taste)
2 tablespoons olive oil
1 small onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
8 oz (225 g) cream cheese, softened
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
1 cup chicken broth
½ cup heavy cream
Salt and pepper to taste
Fresh parsley, chopped for garnish
Instructions
Preheat oven to 350°F (175°C).
Cook pasta according to package instructions until al dente; drain and set aside.
In a large skillet over medium-high heat, toss the chicken cubes with Cajun seasoning. Heat olive oil, then cook chicken until browned and cooked through, about 5–7 minutes.
Add onion, bell pepper, and garlic to skillet; sauté until vegetables soften, around 3–4 minutes.
Pour in chicken broth and heavy cream; bring to a simmer. Stir in cream cheese until melted and smooth.
Mix in shredded cheddar and half of the Parmesan until cheeses melt into the sauce. Season with salt, pepper, and extra Cajun seasoning if desired.
Add cooked pasta to the sauce and stir to coat evenly.
Transfer mixture into a greased baking dish. Sprinkle remaining Parmesan over top.
Bake for 20–25 minutes, until bubbly and lightly golden.
Garnish with chopped parsley before serving.
