Description

Juicy chicken breasts topped with fresh tomatoes, melted mozzarella, fragrant basil, and a drizzle of tangy balsamic glaze. This Caprese Chicken recipe offers a light yet satisfying Italian-inspired dinner that’s perfect for any night of the week.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 cloves garlic, minced

Toppings

  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella, sliced
  • Fresh basil leaves, for garnish
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat the Oven: Set your oven to 190°C (375°F) to prepare for baking the chicken with the toppings.
  2. Season the Chicken: Pat the chicken breasts dry and season both sides generously with salt and black pepper for enhanced flavor.
  3. Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts until golden brown on both sides, about 3-4 minutes per side, to lock in juices and add a flavorful crust.
  4. Prepare for Baking: Transfer the seared chicken breasts to a baking dish. Evenly distribute the minced garlic and halved cherry tomatoes over the chicken.
  5. Add the Cheese: Top each chicken breast with slices of fresh mozzarella to melt beautifully during baking.
  6. Bake the Chicken: Place the baking dish in the preheated oven and cook for 20-25 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the mozzarella is melted and bubbly.
  7. Garnish and Serve: Remove from the oven and finish by topping with fresh basil leaves and a generous drizzle of balsamic glaze for that signature Caprese flavor.

Notes

  • Serve this dish alongside pasta, rice, or a fresh green salad for a complete meal.
  • For extra creaminess, substitute the mozzarella with burrata cheese.
