Juicy chicken breasts topped with fresh tomatoes, melted mozzarella, basil, and a drizzle of balsamic glaze, offering a light yet satisfying Italian-inspired dinner that combines classic Caprese flavors with a simple cooking method.
Ingredients
Chicken
- 4 chicken breasts
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 2 cloves garlic, minced
Toppings
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella, sliced
- Fresh basil leaves, for garnish
- 2 tablespoons balsamic glaze
Instructions
- Preheat Oven: Preheat your oven to 190°C (375°F) to prepare for baking the chicken after searing.
- Season Chicken: Season the chicken breasts evenly on both sides with salt and black pepper to enhance their flavor.
- Sear Chicken: Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and sear them until they develop a light golden crust, about 3-4 minutes per side.
- Prepare for Baking: Transfer the seared chicken breasts to a baking dish. Evenly distribute the minced garlic and halved cherry tomatoes over the top of the chicken.
- Add Mozzarella: Place slices of fresh mozzarella on top of the tomatoes and chicken to melt during baking.
- Bake: Bake the chicken in the preheated oven for 20 to 25 minutes, or until the chicken is cooked through and the mozzarella is melted and slightly bubbly.
- Garnish and Serve: Remove the chicken from the oven and garnish with fresh basil leaves. Drizzle with balsamic glaze just before serving for added flavor and presentation.
Notes
- Serve with pasta, rice, or a green salad for a complete meal.
- Use burrata cheese instead of mozzarella for an extra creamy texture.
