Description

Juicy chicken breasts topped with fresh tomatoes, melted mozzarella, basil, and a drizzle of balsamic glaze, offering a light yet satisfying Italian-inspired dinner that combines classic Caprese flavors with a simple cooking method.

Ingredients

Chicken

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 cloves garlic, minced

Toppings

  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella, sliced
  • Fresh basil leaves, for garnish
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat Oven: Preheat your oven to 190°C (375°F) to prepare for baking the chicken after searing.
  2. Season Chicken: Season the chicken breasts evenly on both sides with salt and black pepper to enhance their flavor.
  3. Sear Chicken: Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and sear them until they develop a light golden crust, about 3-4 minutes per side.
  4. Prepare for Baking: Transfer the seared chicken breasts to a baking dish. Evenly distribute the minced garlic and halved cherry tomatoes over the top of the chicken.
  5. Add Mozzarella: Place slices of fresh mozzarella on top of the tomatoes and chicken to melt during baking.
  6. Bake: Bake the chicken in the preheated oven for 20 to 25 minutes, or until the chicken is cooked through and the mozzarella is melted and slightly bubbly.
  7. Garnish and Serve: Remove the chicken from the oven and garnish with fresh basil leaves. Drizzle with balsamic glaze just before serving for added flavor and presentation.

Notes

  • Serve with pasta, rice, or a green salad for a complete meal.
  • Use burrata cheese instead of mozzarella for an extra creamy texture.
