Instructions
- Simmer Vegetables: In a large pot, combine the sliced carrots and cauliflower florets with the vegetable broth. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until the vegetables are tender and easily pierced with a fork, about 15-20 minutes.
- Blend Soup: Carefully transfer the cooked vegetables and broth to a blender in batches if necessary. Blend until the mixture is completely smooth and creamy. Alternatively, use an immersion blender directly in the pot for convenience.
- Season and Adjust: Return the blended soup to the pot if needed and heat gently. Season with salt and pepper to taste. Stir well and warm through.
