Ingredients
Meat and Vegetables
- 1 lb ground beef
- 1 onion, diced
- 2 carrots, diced
- 2 potatoes, cubed
Liquids and Dairy
- 2 cups broth (beef or chicken)
- 1 cup milk or cream
- 1 cup shredded cheddar cheese
Condiments and Seasoning
- 1 tbsp ketchup
- 1 tsp mustard
- Salt & pepper, to taste
Instructions
- Brown the ground beef and onion: In a large pot over medium heat, cook the ground beef and diced onion together until the beef is fully browned and the onion is softened. Drain off any excess fat to keep the soup from being greasy.
- Add vegetables and seasonings: Stir in the diced carrots, cubed potatoes, broth, ketchup, and mustard. Mix well to combine all the flavors evenly.
- Simmer the soup: Bring the mixture to a boil, then reduce heat to low and let it simmer, uncovered, for 15 to 20 minutes or until the potatoes and carrots are tender and cooked through.
- Finish with milk and cheese: Lower the heat and gradually stir in the milk or cream, then add the shredded cheddar cheese. Stir continuously until the cheese melts completely and the soup becomes thick and creamy. Season with salt and pepper to taste before serving.
