Ingredients

Chicken and Seasoning

  • 1 lb boneless, skinless chicken breast, diced

  • 1 teaspoon garlic powder

Rice and Vegetables

  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 2 cups broccoli florets (fresh or frozen)

Cheese Sauce

  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup milk or cream

Optional Garnish

  • Chopped parsley or green onions


Instructions

  1. Heat Oil and Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add diced chicken, season with salt, pepper, paprika, and garlic powder, then cook until lightly browned and cooked through. Remove chicken and set aside.
  2. Cook Rice: In the same skillet, add uncooked rice and chicken broth. Stir to combine and bring to a gentle boil. Reduce heat to low, cover, and simmer for 12–15 minutes until the rice is nearly tender.
  3. Add Broccoli and Continue Cooking: Stir in broccoli florets, cover again, and cook for an additional 3–5 minutes until broccoli is tender.
  4. Combine Chicken and Cheese: Return the cooked chicken to the skillet and stir to combine. Add milk and shredded cheddar and mozzarella cheeses, stirring until the cheese melts and the sauce becomes creamy.
  5. Finish and Serve: Taste and adjust seasoning if necessary. Garnish with chopped parsley or green onions if desired. Serve the skillet warm.
