Description
Cheesy Chicken Fritters are tender, juicy, and packed with mozzarella, dill, and seasoning, pan-fried until golden and crispy. Paired with a creamy garlic aioli dip, they’re perfect as a snack, appetizer, or main dish.
Ingredients
- 1 ½ lbs chicken breasts (about 3 large breasts), diced
- 2 large eggs
- ⅓ cup mayonnaise
- ⅓ cup all-purpose flour (or cornstarch/potato starch for gluten-free)
- 4 oz mozzarella cheese (about 1 ⅓ cups shredded)
- 1 ½ tbsp chopped fresh dill
- ½ tsp salt (or to taste)
- ⅛ tsp black pepper
- 2 tbsp extra light olive oil (or any high-heat oil)
- For the Garlic Aioli Dip (Optional):
- ⅓ cup mayonnaise
- 1 garlic clove, pressed
- ½ tbsp lemon juice
- ¼ tsp salt
- ⅛ tsp black pepper
Instructions
- Prepare the Chicken Mixture: Dice chicken into ⅓-inch pieces and place in a bowl. Add eggs, mayo, flour, mozzarella, dill, salt, and pepper. Mix until combined. Cover and refrigerate for 2 hours or overnight.
- Cook the Fritters: Heat oil in a non-stick pan over medium heat. Scoop heaping tablespoons of the mixture, flatten slightly, and sauté uncovered for 3–4 minutes per side or until golden and cooked through. Repeat with remaining mixture.
- Make the Garlic Aioli Dip: Combine mayonnaise, pressed garlic, lemon juice, salt, and pepper in a small bowl. Stir until smooth and refrigerate until serving.
- Serve: Serve fritters hot with garlic aioli dip. Garnish with fresh dill or parsley if desired.
