This cheesy ground beef rice casserole is a creamy, savory dish packed with ground beef, rice, and melted cheddar cheese. It’s an easy and comforting weeknight meal perfect for feeding the whole family.
Ingredients
Meat and Vegetables
- 1 lb ground beef
- 1 onion, diced
Grains and Liquids
- 1 cup uncooked rice
- 2 cups beef or chicken broth
Dairy and Pantry
- 1 can cream of mushroom or chicken soup (10.5 oz)
- 2 cups shredded cheddar cheese
- Salt, pepper, paprika to taste
Instructions
- Cook the ground beef and onion: In a large skillet over medium heat, cook the ground beef and diced onion together until the beef is fully browned and the onions are tender, about 5-7 minutes. Drain excess fat.
- Combine ingredients: Stir in the uncooked rice, beef or chicken broth, cream of mushroom or chicken soup, and season with salt, pepper, and paprika. Mix thoroughly to combine all the flavors evenly.
- Transfer to casserole dish and bake: Pour the mixture into a greased casserole dish. Bake uncovered in a preheated oven at 375°F (190°C) for 30 to 35 minutes, until the rice is tender and most of the liquid is absorbed.
- Add cheese topping: Remove the casserole from the oven and sprinkle the shredded cheddar cheese evenly over the top.
- Bake to melt cheese: Return the casserole to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Notes
- For a healthier option, use brown rice but increase baking time by 15 to 20 minutes to ensure it cooks through.
- Add vegetables like peas, corn, or spinach to the mixture before baking for added nutrition and color.
- You can substitute cream of chicken soup with cream of mushroom if preferred for a milder flavor.
