Description

This cheesy ground beef rice casserole is a creamy, savory dish packed with ground beef, rice, and melted cheddar cheese. It’s an easy and comforting weeknight meal perfect for feeding the whole family.

Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • 1 onion, diced

Grains and Liquids

  • 1 cup uncooked rice
  • 2 cups beef or chicken broth

Dairy and Pantry

  • 1 can cream of mushroom or chicken soup (10.5 oz)
  • 2 cups shredded cheddar cheese
  • Salt, pepper, paprika to taste

Instructions

  1. Cook the ground beef and onion: In a large skillet over medium heat, cook the ground beef and diced onion together until the beef is fully browned and the onions are tender, about 5-7 minutes. Drain excess fat.
  2. Combine ingredients: Stir in the uncooked rice, beef or chicken broth, cream of mushroom or chicken soup, and season with salt, pepper, and paprika. Mix thoroughly to combine all the flavors evenly.
  3. Transfer to casserole dish and bake: Pour the mixture into a greased casserole dish. Bake uncovered in a preheated oven at 375°F (190°C) for 30 to 35 minutes, until the rice is tender and most of the liquid is absorbed.
  4. Add cheese topping: Remove the casserole from the oven and sprinkle the shredded cheddar cheese evenly over the top.
  5. Bake to melt cheese: Return the casserole to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Notes

  • For a healthier option, use brown rice but increase baking time by 15 to 20 minutes to ensure it cooks through.
  • Add vegetables like peas, corn, or spinach to the mixture before baking for added nutrition and color.
  • You can substitute cream of chicken soup with cream of mushroom if preferred for a milder flavor.
