Description

This Cheesy Herb Multigrain Bread is a savory, soft loaf bursting with rich flavors from melted cheese and aromatic dried herbs. Crafted with hearty whole wheat and bread flours combined with rolled oats, it offers a wholesome texture and a golden, cheesy crust. Ideal for sandwiches, toasts, or paired with soups and pasta, this bread is a delicious artisan-style homemade treat.

Ingredients

Liquid Base

  • 2 cups warm water (about 110°F / 43°C)
  • 1 tbsp honey or sugar
  • 3 tbsp olive oil or melted butter

Dry Ingredients

  • 2¼ tsp active dry yeast
  • 2 cups whole wheat flour
  • 1½ cups bread flour or all-purpose flour
  • ½ cup rolled oats
  • 1½ tsp salt

Cheese & Herbs

  • 1½ cups shredded cheddar, mozzarella, or a blend
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp garlic powder

Optional Topping

  • Extra shredded cheese
  • Oats or herbs for sprinkling

Instructions

  1. Activate Yeast: In a large mixing bowl, combine the warm water, active dry yeast, and honey or sugar. Stir gently and let the mixture sit for 5 to 10 minutes until it becomes foamy, indicating the yeast is active.
  2. Add Fat: Stir in the olive oil or melted butter into the yeast mixture to provide richness and moisture to the dough.
  3. Mix Dry Ingredients: Add the whole wheat flour, bread or all-purpose flour, rolled oats, salt, dried rosemary, thyme, oregano, garlic powder, and shredded cheese to the bowl.
  4. Form Dough: Mix the ingredients until a rough dough forms. Transfer to a floured surface and knead for 8 to 10 minutes until the dough is smooth and elastic, developing good gluten structure.
  5. First Rise: Place the dough in a lightly oiled bowl, cover it with a clean cloth or plastic wrap, and let it rise in a warm place for 1 to 1½ hours or until it doubles in size.
  6. Shape Loaf: Punch down the risen dough gently to release air, shape it into a loaf, and place it into a greased loaf pan.
  7. Second Rise: Cover the loaf pan and let the dough rise again for 30 to 45 minutes until it slightly puffs up.
  8. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking.
  9. Add Topping: If desired, sprinkle extra shredded cheese and oats or herbs on top of the loaf before baking for added texture and flavor.
  10. Bake: Bake the bread in the preheated oven for 35 to 40 minutes until the loaf is golden brown and sounds hollow when tapped on the bottom, indicating it is fully baked.
  11. Cool: Remove the bread from the oven and transfer it to a wire rack to cool completely before slicing to ensure the texture sets properly.

Notes

  • For a stronger cheesy flavor, use sharp cheddar; mozzarella will yield a milder taste.
  • Fresh herbs can be used instead of dried—use three times the amount.
  • This bread is excellent served warm with butter or olive oil for added richness.
