These Cheesy Pepperoni Pizza Roll-Ups are a quick, fun, and delicious way to enjoy pizza flavors with a low-carb twist. They’re perfect as a snack or appetizer, featuring gooey mozzarella cheese and savory pepperoni all wrapped in low-carb tortillas!
Ingredients
4 cups shredded mozzarella cheese
8 low-carb tortillas
½ cup pizza sauce
48 slices pepperoni
Instructions
Heat the Skillet:
Place a large nonstick skillet over medium-high heat.
Add Cheese:
Sprinkle ½ cup of mozzarella cheese in the center of the skillet and let it melt without stirring.
Add the Tortilla:
Once the cheese begins to melt and bubble, place a tortilla on top, gently pressing it into the melted cheese.
Flip and Add Toppings:
When the cheese starts to brown and crisp, carefully flip the tortilla. The cheese should be attached to the tortilla. Spread about 1 tablespoon of pizza sauce in the center of the tortilla and top with 6 slices of pepperoni.
Roll Up:
Roll the tortilla carefully from one side to the other, securing the cheese and pepperoni inside.
Repeat:
Repeat the steps with the remaining ingredients to make more pizza roll-ups.
Serve:
Serve the roll-ups warm with extra pizza sauce for dipping.
