Ingredients

1 pre-made pie crust (9-inch)

1 cup fresh spinach, chopped

1 cup mushrooms, sliced (button or cremini)

1 small onion, finely chopped

2 cloves garlic, minced

4 large eggs

1 cup heavy cream

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

1 teaspoon dried thyme

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil

Optional: fresh parsley for garnish


Instructions

Preheat oven to 375°F (190°C).

Heat olive oil in a skillet. Sauté onion for 3-4 minutes until softened. Add garlic and mushrooms, cook 5-7 minutes until tender. Stir in spinach and cook 2 minutes until wilted. Remove from heat.

Whisk eggs, cream, thyme, salt, and pepper in a bowl. Stir in sautéed vegetables.

Place pie crust in a 9-inch pie dish. Sprinkle cheeses evenly on the bottom. Pour egg and vegetable mixture over cheese.

Bake 35-40 minutes until edges are golden and center is set.

Cool 10 minutes before slicing. Garnish with parsley if desired. Serve warm or at room temperature.

Notes

Pre-baking the crust 5-7 minutes can prevent sogginess.

Substitute Swiss or Gruyère cheese for cheddar for a different flavor.
