Description

Light and flavorful, this chicken and couscous dish brings together tender chicken, vibrant vegetables, and fluffy couscous for a balanced Mediterranean-inspired meal that’s easy to prepare and perfect for weeknight dinners.

Ingredients

Protein

  • 1 lb chicken breast, cubed

Grains

  • 1 cup couscous

Liquids

  • 1½ cups chicken broth

Vegetables

  • 1 bell pepper, diced

Oils & Spices

  • 1 tbsp olive oil
  • 1 tsp cumin
  • Salt & pepper, to taste

Instructions

  1. Brown the chicken: Heat olive oil in a large skillet or pot over medium heat. Add the cubed chicken breast and cook, stirring occasionally, until the pieces are browned and cooked through, about 6-8 minutes.
  2. Add vegetables and spices: Stir in the diced bell pepper, then pour in the chicken broth. Sprinkle the cumin, salt, and pepper over the mixture. Bring it to a gentle simmer, allowing the flavors to meld for 3-4 minutes.
  3. Cook the couscous: Remove the pot from heat and stir in the couscous. Immediately cover the pot with a tight-fitting lid to trap the steam.
  4. Steam and fluff: Let the couscous sit, covered, for 5 minutes so it can absorb the broth and become tender. Afterward, fluff the couscous with a fork to separate the grains and mix everything evenly.
  5. Serve: Transfer to plates or bowls and serve warm. Optionally, garnish with lemon juice or fresh parsley for added brightness and color.

Notes

  • Add a squeeze of fresh lemon juice or chopped parsley before serving to brighten the flavors.
  • You can substitute bell pepper with other veggies like zucchini or tomatoes depending on preference.
  • For a spicier kick, add a pinch of cayenne pepper or red chili flakes.
  • Using low-sodium chicken broth can help control salt levels.
