Instructions
- Brown the chicken: Heat olive oil in a large skillet or pot over medium heat. Add the cubed chicken breast and cook, stirring occasionally, until the pieces are browned and cooked through, about 6-8 minutes.
- Add vegetables and spices: Stir in the diced bell pepper, then pour in the chicken broth. Sprinkle the cumin, salt, and pepper over the mixture. Bring it to a gentle simmer, allowing the flavors to meld for 3-4 minutes.
- Cook the couscous: Remove the pot from heat and stir in the couscous. Immediately cover the pot with a tight-fitting lid to trap the steam.
- Steam and fluff: Let the couscous sit, covered, for 5 minutes so it can absorb the broth and become tender. Afterward, fluff the couscous with a fork to separate the grains and mix everything evenly.
- Serve: Transfer to plates or bowls and serve warm. Optionally, garnish with lemon juice or fresh parsley for added brightness and color.
