Ingredients
Chicken and Broth
- 4 chicken thighs or breasts
- 4 cups chicken broth
- 2 tablespoons butter
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1/2 cup milk or cream
- Salt, to taste
- Black pepper, to taste
Dumplings
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons butter, melted
Instructions
- Cook the chicken: Place the chicken thighs or breasts in a large pot with the chicken broth. Bring to a boil, then reduce heat and simmer until the chicken is cooked through and tender, about 25-30 minutes. Remove the chicken and shred it with two forks; set aside.
- Sauté vegetables: In the same pot, melt the butter over medium heat. Add the diced onion, sliced carrots, and celery. Cook, stirring occasionally, until the vegetables begin to soften, approximately 5-7 minutes.
- Add garlic and chicken: Stir in the minced garlic and cook for 1 minute until fragrant. Return the shredded chicken to the pot.
- Add liquids and simmer: Pour in the chicken broth and milk or cream. Stir to combine and bring the mixture to a gentle simmer.
- Prepare dumpling dough: In a bowl, mix together the all-purpose flour, baking powder, and salt. Add the milk and melted butter, stirring until you form a soft dough.
- Cook dumplings: Drop spoonfuls of the dumpling dough carefully into the simmering soup. Cover the pot with a tight-fitting lid and cook without lifting for 12-15 minutes, until dumplings are cooked through and fluffy.
- Season and serve: Taste the soup and season with salt and black pepper as desired. Serve hot, spooning dumplings and chicken into each bowl.
Notes
- Do not lift the lid while the dumplings are cooking to ensure they steam properly and become fluffy.
- The soup will thicken as it rests; if it becomes too thick, thin with additional broth or milk before serving.
