Ingredients

Soup:

  • Salt & pepper, to taste

Dumplings:

  • 1 cup flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 2 tbsp melted butter


Instructions

  1. Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion, sliced carrots, and celery. Cook, stirring occasionally, until the vegetables are softened and fragrant.
  2. Add Flour to Make Roux: Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for 1-2 minutes to cook out the raw flour taste, stirring continuously.
  3. Add Broth and Simmer: Gradually pour in the chicken broth while stirring to avoid lumps. Bring the mixture to a gentle simmer.
  4. Add Chicken and Season: Add the shredded chicken to the pot. Season with salt and pepper according to taste. Stir and let everything simmer together for a few minutes to blend flavors.
  5. Prepare Dumpling Dough: In a separate bowl, mix the flour, baking powder, and salt. Stir in the milk and melted butter to form a soft dumpling dough.
  6. Drop Dumplings into Soup: Using a spoon, drop spoonfuls of the dumpling dough gently onto the simmering soup surface, spacing them evenly.
  7. Cover and Cook Dumplings: Cover the pot with a tight-fitting lid and cook for 15 minutes without lifting the lid. The dumplings will steam and become fluffy as they cook.
