Description
A comforting classic chicken and dumplings recipe featuring a creamy chicken stew loaded with tender shredded chicken, sliced carrots, celery, and fluffy homemade dumplings. This warm and hearty dish is perfect for cozy nights and family meals.
Ingredients
Soup:
- 2 cups cooked shredded chicken
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 onion, diced
- 2 tbsp butter
- 2 tbsp flour
- Salt & pepper, to taste
Dumplings:
- 1 cup flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup milk
- 2 tbsp melted butter
Instructions
- Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion, sliced carrots, and celery. Cook, stirring occasionally, until the vegetables are softened and fragrant.
- Add Flour to Make Roux: Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for 1-2 minutes to cook out the raw flour taste, stirring continuously.
- Add Broth and Simmer: Gradually pour in the chicken broth while stirring to avoid lumps. Bring the mixture to a gentle simmer.
- Add Chicken and Season: Add the shredded chicken to the pot. Season with salt and pepper according to taste. Stir and let everything simmer together for a few minutes to blend flavors.
- Prepare Dumpling Dough: In a separate bowl, mix the flour, baking powder, and salt. Stir in the milk and melted butter to form a soft dumpling dough.
- Drop Dumplings into Soup: Using a spoon, drop spoonfuls of the dumpling dough gently onto the simmering soup surface, spacing them evenly.
- Cover and Cook Dumplings: Cover the pot with a tight-fitting lid and cook for 15 minutes without lifting the lid. The dumplings will steam and become fluffy as they cook.
- Serve: Once the dumplings are cooked through and fluffy, remove the pot from heat and serve the chicken and dumplings hot for a cozy meal.
Notes
- Avoid lifting the lid while dumplings are cooking to ensure they steam properly and stay fluffy.
- For extra flavor, consider adding fresh or frozen peas and a pinch of thyme to the stew before simmering.
