Description

A hearty and comforting Chicken Beef Ranch Casserole that combines tender chicken, savory ground beef, pasta, and a creamy, ranch-seasoned sauce topped with melted cheddar cheese. Perfect for a family dinner or meal prep, this casserole is flavorful, easy to make, and freezer-friendly.

Ingredients

Protein

  • 2 cups cooked chicken, diced
  • 1 pound ground beef

Pasta

  • 3 cups pasta (penne or rotini)

Seasonings & Dairy

  • 1 packet (1 oz) ranch seasoning mix
  • 4 oz cream cheese
  • 1 cup milk
  • 1 ½ cups shredded cheddar cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven: Preheat your oven to 190°C (375°F) to prepare for baking the casserole.
  2. Cook the pasta: Boil the pasta according to the package instructions until al dente, then drain and set aside.
  3. Brown the beef mixture: In a skillet over medium heat, brown the ground beef along with the diced onion and minced garlic until the beef is fully cooked and the onion is translucent. Drain off any excess fat.
  4. Make the creamy sauce: Stir the cream cheese, milk, and ranch seasoning mix into the browned beef mixture until well combined and creamy.
  5. Combine ingredients: In a large bowl or directly in the baking dish, mix together the cooked pasta, beef mixture, and diced cooked chicken evenly.
  6. Assemble and top: Transfer the combined mixture into a baking dish and evenly sprinkle the shredded cheddar cheese over the top.
  7. Bake the casserole: Bake uncovered in the preheated oven for 30 to 35 minutes or until the casserole is bubbly and the cheddar cheese is melted and golden brown.

Notes

  • Add cooked bacon bits for extra smoky flavor and texture.
  • This casserole freezes well; cool completely before freezing in an airtight container.
  • Use sharp cheddar for a more pronounced cheesy taste or mozzarella for a milder flavor.
  • Can substitute cream cheese with sour cream for a tangier taste.
