Ingredients
2 chicken breasts, boneless and skinless
8 oz pasta (penne, fettuccine, or spaghetti)
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper, to taste
Fresh parsley, chopped (optional, for garnish)
1 tablespoon butter
Instructions
-
Cook the pasta according to the package directions. Once done, drain and set aside.
-
Season the chicken breasts with salt, pepper, and Italian seasoning.
-
In a large skillet, heat olive oil over medium heat. Cook the chicken for 6-7 minutes on each side until no longer pink in the center. Remove the chicken and set aside to rest.
-
In the same skillet, add butter and garlic. Sauté for 1 minute until fragrant.
-
Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes to thicken slightly.
-
Stir in the Parmesan cheese, cooking for another 2 minutes until melted into the sauce.
-
Slice the chicken and add it to the skillet with the pasta. Toss well to coat with the creamy sauce.
-
Garnish with fresh parsley and serve immediately.
Notes
- For a vegetarian version, replace chicken with sautéed mushrooms or roasted vegetables.
- Spice it up with red pepper flakes in the garlic sauce for a little heat.
- For a lighter option, swap heavy cream with half-and-half or Greek yogurt.
