Noodles

  • 2 packs shirataki noodles, rinsed

Chicken & Vegetables

  • 1 lb chicken breast, sliced thin
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup snap peas or carrots

Seasonings & Garnish

  • 1 tbsp olive or sesame oil
  • 2 tbsp soy sauce or coconut aminos
  • 1 tbsp minced garlic
  • 1 tsp ginger (optional)
  • Salt & pepper to taste
  • Green onions & sesame seeds (for garnish)


Instructions

  1. Prepare the noodles: Rinse the shirataki noodles thoroughly under cold water and pat dry with paper towels. Set aside to remove excess moisture, which improves texture during cooking.
  2. Cook the chicken: Heat the olive or sesame oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast and stir-fry until fully cooked and slightly browned, about 5-6 minutes.
  3. Add aromatics and vegetables: Stir in the minced garlic and optional ginger, cooking for about 30 seconds until fragrant. Then add the broccoli florets, red bell pepper slices, and snap peas or carrots. Sauté everything together for 3 to 4 minutes until the vegetables are tender-crisp.
  4. Toss with noodles and sauce: Add the drained shirataki noodles to the skillet. Pour in the soy sauce or coconut aminos, season with salt and pepper, and toss everything together thoroughly. Cook for an additional 2 minutes to heat the noodles and allow flavors to meld.
