Ingredients
Noodles
- 1 package shirataki noodles, rinsed and drained
Protein
- 8 oz chicken breast, thinly sliced
Vegetables
- 1 cup broccoli florets
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
Sauces and Oils
- 2 tablespoons soy sauce or tamari
- 1 teaspoon sesame oil
- 1 tablespoon vegetable oil
- 1 teaspoon rice vinegar
Seasonings
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare Noodles: Rinse the shirataki noodles thoroughly under cold running water to reduce their distinctive odor. Then dry-fry them in a non-stick pan over medium-high heat for 2 to 3 minutes to remove excess moisture. Set aside.
- Heat Oil: Heat vegetable oil in a wok or large skillet over high heat until shimmering, ensuring it’s hot enough for stir frying.
- Cook Chicken: Add the thinly sliced chicken breast to the pan and cook until lightly browned and cooked through, about 4 to 5 minutes, stirring frequently to prevent sticking.
- Add Aromatics: Stir in the minced garlic and grated ginger, cooking briefly for about 30 seconds until fragrant, taking care not to burn.
- Cook Vegetables: Add the broccoli florets and sliced bell pepper to the pan, stir frying for 3 to 4 minutes until they are tender-crisp but still vibrant and slightly crunchy.
- Combine Noodles and Sauce: Add the prepared shirataki noodles back into the pan. Pour in the soy sauce or tamari, sesame oil, and rice vinegar. Toss everything together thoroughly so the sauce evenly coats the noodles, chicken, and vegetables.
- Finish Cooking: Continue cooking for an additional 2 to 3 minutes until everything is heated through and well combined. Taste and adjust seasoning with salt and black pepper as needed.
- Serve: Remove from heat and serve immediately for the best texture and flavor.
Notes
- For a spicy kick, add chili flakes or fresh chili while cooking the aromatics.
- You can substitute broccoli and bell pepper with other vegetables like zucchini, snow peas, or carrots for variety.
- Rinsing and dry-frying shirataki noodles is essential to improve their texture and reduce odor.
