Description
These chocolate-covered cherry truffles are rich, smooth, and bursting with cherry flavor. With a creamy cherry center coated in dark chocolate, they taste just like the classic holiday candy—perfect for gifting, celebrations, or special occasions.
Ingredients
Cherry Filling
- 1 cup maraschino cherries, finely chopped
- 3 tbsp cherry juice (from the jar)
- 3 tbsp unsalted butter, softened
- 2 cups powdered sugar
- ½ tsp almond extract
Chocolate Coating
- 12 oz semi-sweet or dark chocolate, chopped
- 1 tbsp coconut oil or shortening (optional, for smooth coating)
Instructions
- Prepare Cherries: Drain cherries well and pat dry to remove excess moisture. Chop them finely to create a smooth filling texture.
- Mix Filling: In a bowl, combine softened butter, powdered sugar, cherry juice, and almond extract. Mix thoroughly until the mixture is smooth and well incorporated.
- Fold in Cherries: Gently fold the chopped cherries into the filling mixture, ensuring even distribution without breaking down the cherries too much.
- Chill Mixture: Place the cherry filling in the refrigerator and chill for 30 to 45 minutes until it firms up enough to shape into balls.
- Shape Truffles: Scoop the firm mixture and roll into 1-inch diameter balls using your hands for uniform size and shape.
- Freeze Truffles: Freeze the shaped truffles for 15 minutes to make dipping easier and to help them hold their shape.
- Melt Chocolate: Melt the chopped chocolate together with coconut oil using a double boiler or microwave in 30-second intervals until smooth and glossy.
- Coat Truffles: Dip each chilled truffle completely into the melted chocolate covering all sides. Allow excess chocolate to drip off.
- Set Truffles: Place coated truffles on a parchment-lined tray and let them set at room temperature or refrigerate until the chocolate is firm.
- Store: Keep the truffles refrigerated until ready to serve to maintain freshness and texture.
Notes
- Make sure cherries are very dry to prevent the filling from becoming too soft or runny.
- Use dark chocolate for the best flavor balance between sweet and tart.
- Optional: Decorate truffles with chocolate drizzle or sprinkles for a festive look.
- Store truffles in the refrigerator for up to 1 week to keep them fresh.
