Ingredients

  • 12 oz semi-sweet or dark chocolate, chopped
  • 1 tbsp coconut oil or shortening (optional, for smooth coating)


Instructions

  1. Prepare Cherries: Drain cherries well and pat dry to remove excess moisture. Chop them finely to create a smooth filling texture.
  2. Mix Filling: In a bowl, combine softened butter, powdered sugar, cherry juice, and almond extract. Mix thoroughly until the mixture is smooth and well incorporated.
  3. Fold in Cherries: Gently fold the chopped cherries into the filling mixture, ensuring even distribution without breaking down the cherries too much.
  4. Chill Mixture: Place the cherry filling in the refrigerator and chill for 30 to 45 minutes until it firms up enough to shape into balls.
  5. Shape Truffles: Scoop the firm mixture and roll into 1-inch diameter balls using your hands for uniform size and shape.
  6. Freeze Truffles: Freeze the shaped truffles for 15 minutes to make dipping easier and to help them hold their shape.
  7. Melt Chocolate: Melt the chopped chocolate together with coconut oil using a double boiler or microwave in 30-second intervals until smooth and glossy.
