Description
Hearty breakfast burritos filled with spicy chorizo, eggs, crispy potatoes, and melted cheese, cooked on a griddle to achieve a golden, crispy exterior perfect for a satisfying morning meal.
Ingredients
Main Ingredients
- 4 large flour tortillas
- ½ lb chorizo
- 4 eggs
- 1 cup cooked hash browns or diced potatoes
- 1 cup shredded cheese (cheddar or Mexican blend recommended)
- 2 tbsp oil or butter
- Salt & pepper, to taste
Optional Toppings
- Salsa
- Avocado slices
- Sour cream
Instructions
- Cook the chorizo: Heat 1 tablespoon of oil or butter on the griddle over medium heat. Add the chorizo and cook until it is browned and cooked through, breaking it apart as it cooks for even texture, about 5–7 minutes.
- Add the potatoes: Add the cooked hash browns or diced potatoes to the griddle with the chorizo. Continue cooking until the potatoes become golden brown and crispy, approximately 5 minutes. Season with salt and pepper to taste.
- Scramble the eggs: In a separate pan or on another part of the griddle, scramble the eggs by whisking them with a pinch of salt and pepper and cooking until softly set but fully cooked, about 3–4 minutes.
- Combine the filling: Mix the scrambled eggs with the cooked chorizo and crispy potatoes thoroughly to ensure even distribution of flavors.
- Assemble the burritos: Place a flour tortilla flat on the griddle. Spoon the chorizo, egg, and potato mixture evenly onto the center of each tortilla, then sprinkle shredded cheese over the filling.
- Fold and crisp: Fold the sides of the tortilla over the filling, then roll tightly to enclose. Place each burrito seam-side down on the griddle and press gently. Cook for 2–3 minutes per side or until the tortilla is golden brown and crispy and the cheese has melted.
- Serve: Remove the burritos from the griddle and serve immediately with optional toppings like salsa, avocado slices, and sour cream for added flavor and creaminess.
Notes
- These burritos can be frozen individually for easy meal prep; reheat them in an air fryer or conventional oven for best texture.
- For a low-carb version, substitute flour tortillas with low-carb or whole wheat tortillas.
- Adjust the spiciness by choosing mild or spicy chorizo depending on preference.
- If you want a vegetarian option, substitute the chorizo with plant-based sausage or seasoned mushrooms.
