Ingredients
Dry Ingredients:
- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- 1 ½ tsp ground cinnamon
- ¼ tsp salt
Wet Ingredients:
- ½ cup brown sugar
- ½ cup granulated sugar
- ⅓ cup melted butter or coconut oil
- 2 large eggs
- 1 cup mashed ripe bananas (about 2 medium)
- 1 tsp vanilla extract
- ¼ cup milk
Optional:
- ½ cup chopped walnuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
- In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- In another bowl, mix sugars, melted butter, eggs, mashed bananas, vanilla, and milk until smooth.
- Combine wet and dry ingredients just until blended (do not overmix). Fold in nuts or chocolate chips if using.
- Divide batter evenly among muffin cups (about ¾ full).
- Bake 18–22 minutes or until a toothpick inserted in the center comes out clean.
- Cool 5 minutes in the pan, then transfer to a rack.
Notes
- For extra flavor, sprinkle the tops with cinnamon sugar before baking.
- Store in an airtight container for 3–4 days or freeze up to 2 months.
- Add 1 tbsp sour cream or yogurt for an even moister crumb.
