Ingredients
For the Crepes:
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/4 cups milk
- 1 tablespoon melted butter
- 1 teaspoon vanilla extract
- Pinch of salt
For the Cinnamon Filling:
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons softened butter
For the Cream Cheese Glaze:
- 4 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Crepe Batter: In a mixing bowl, whisk together the flour, eggs, milk, melted butter, vanilla extract, and a pinch of salt until smooth and well combined to create a thin crepe batter.
- Cook the Crepes: Heat a non-stick skillet over medium heat and lightly grease it. Pour a small amount of batter into the skillet, swirling to cover the bottom evenly. Cook each crepe for about 1-2 minutes per side until lightly golden. Repeat until all batter is used.
- Make the Cinnamon Filling: In a small bowl, mix the brown sugar, ground cinnamon, and softened butter until it forms a spreadable paste.
- Fill the Crepes: Spread a thin layer of the cinnamon mixture evenly over each cooked crepe.
- Roll the Crepes: Roll each crepe tightly into a log shape to enclose the filling.
- Prepare the Cream Cheese Glaze: Whisk together the softened cream cheese, powdered sugar, milk (start with 2 tablespoons and add more if needed for desired consistency), and vanilla extract until smooth and pourable.
- Serve: Optionally warm the rolled crepes briefly in the oven, then drizzle the cream cheese glaze generously over the top before serving.
Notes
