Description

Ingredients

For the Muffins

  • 1 ¾ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, melted and slightly cooled
  • 2 large eggs
  • ¾ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract
  • ¼ cup milk

For the Cinnamon Swirl

  • ¼ cup brown sugar
  • 1 tsp ground cinnamon

For the Streusel Topping

  • ½ cup flour
  • ⅓ cup brown sugar
  • 1 tsp cinnamon
  • 4 tbsp butter, melted


Instructions

  1. Preheat oven to 375 °F (190 °C). Line or grease a 12-cup muffin tin.
  2. Make the streusel: Mix flour, brown sugar, and cinnamon; stir in melted butter until crumbly. Set aside.
  3. Make the cinnamon swirl: Combine brown sugar and cinnamon in a small bowl.
  4. Prepare the batter: In a large bowl, whisk flour, sugars, baking powder, baking soda, and salt. In another bowl, whisk melted butter, eggs, sour cream, vanilla, and milk until smooth. Fold wet into dry ingredients just until combined.
  5. Assemble: Spoon a bit of batter into each muffin cup, sprinkle some cinnamon swirl mixture, then top with remaining batter. Finish with streusel topping.
  6. Bake 18–22 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool 5 minutes in pan, then transfer to a wire rack. Optional: Dust with powdered sugar or drizzle with simple glaze.

Notes

  • For extra richness, add ½ tsp espresso powder to the batter.
  • Store at room temperature up to 3 days or freeze up to 2 months.
  • Replace half the flour with whole wheat for a heartier texture.
