Cookie Monster Cookies are a fun and colorful twist on classic chocolate chip cookies, featuring bright blue frosting and a chewy texture. These delicious cookies, adorned with “eyes” made from blue candy melts or frosting, are perfect for kids and adults alike. Ingredients
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 cup unsalted butter, at room temperature
1/2 cup granulated sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups semi-sweet chocolate chips
1/2 cup blue candy melts or blue frosting (for the Cookie Monster “eyes”)
1/4 cup mini chocolate chips (for Cookie Monster’s “pupils”)
Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

In a medium bowl, whisk together the flour and baking soda. Set aside.

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the flour mixture to the wet ingredients, mixing until just combined.

Fold in the chocolate chips until evenly distributed.

Scoop about 1 tablespoon of dough and roll it into a ball. Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 9-11 minutes, or until the edges are golden brown and the center is still soft.

Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Once the cookies have cooled, melt the blue candy melts or frosting and use it to create Cookie Monster’s “eyes” on top of each cookie. Use mini chocolate chips to make the pupils.

Allow the frosting to set before serving.
