Ingredients
Soup Base
- 2 tbsp butter
- 1 onion, diced
- 2 garlic cloves, minced
- ¼ cup flour
- 2 cups half-and-half or milk
- 2 cups chicken or vegetable broth
Vegetables
- 2 cups chopped broccoli florets
- 1 cup shredded carrots
Cheese & Seasoning
- 2 cups shredded cheddar cheese
- Salt & pepper to taste
Instructions
- Sauté Aromatics: Melt butter in a pot over medium heat. Add diced onion and sauté for about 3 minutes until soft and translucent. Then add minced garlic and cook for another minute, releasing its aroma.
- Create Roux: Stir in the flour and cook for 1 minute, stirring constantly to form a roux that will thicken the soup.
- Add Liquids: Gradually pour in the half-and-half (or milk) and chicken or vegetable broth while whisking continuously to prevent lumps and create a smooth base.
- Add Vegetables & Simmer: Add the chopped broccoli florets and shredded carrots. Allow the soup to simmer gently for 15 minutes, until the vegetables are tender and the soup has thickened slightly.
- Incorporate Cheese & Season: Stir in the shredded cheddar cheese until fully melted and the soup is creamy. Taste and season with salt and pepper as desired before serving.
