Ingredients

Soup Base

  • 2 tbsp butter
  • 1 onion, diced
  • 2 garlic cloves, minced
  • ¼ cup flour
  • 2 cups half-and-half or milk
  • 2 cups chicken or vegetable broth

Vegetables

  • 2 cups chopped broccoli florets
  • 1 cup shredded carrots

Cheese & Seasoning

  • 2 cups shredded cheddar cheese
  • Salt & pepper to taste


Instructions

  1. Sauté Aromatics: Melt butter in a pot over medium heat. Add diced onion and sauté for about 3 minutes until soft and translucent. Then add minced garlic and cook for another minute, releasing its aroma.

  3. Add Liquids: Gradually pour in the half-and-half (or milk) and chicken or vegetable broth while whisking continuously to prevent lumps and create a smooth base.
