Description

A comforting and effortlessly cozy crockpot dish featuring tender chicken slow-cooked with creamy elements and warming spices—perfect for chilly evenings or busy family dinners.


Ingredients

1½ lb boneless, skinless chicken breasts

2 (15 oz) cans white beans (e.g., Great Northern or cannellini), drained and rinsed

1 (4 oz) can diced green chilies

1 small onion, chopped

2 cloves garlic, minced

3 cups chicken broth

1 tsp ground cumin

1 tsp dried oregano

½ tsp chili powder

½ tsp salt (adjust to taste)

¼ tsp black pepper

1 (8 oz) block cream cheese, cubed 


Instructions

Add the chicken, white beans, diced green chilies, onion, garlic, chicken broth, and spices (cumin, oregano, chili powder, salt, black pepper) into the crockpot. Stir gently to combine.

Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is cooked through and tender.

Remove the chicken and shred it with two forks; return it to the crockpot.

Add the cubed cream cheese and stir until fully melted and the chili is creamy.

Adjust seasoning if needed, and serve hot.
