Ingredients
8 to 10 oz fettuccine
1 ripe avocado
1 cup fresh spinach
1 clove garlic
¼ cup fresh basil leaves
¼ cup Parmesan cheese, grated (or Parmigiano Reggiano)
¼ cup olive oil
1 tablespoon lemon juice
½ cup pasta water
Salt (if using Parmigiano Reggiano, add ½ teaspoon salt)
Instructions
Cook the Pasta:
Bring a pot of salted water to a boil and cook the fettuccine according to package directions.
Prepare the Avocado Sauce:
While the pasta is cooking, combine the avocado, spinach, garlic, basil, Parmesan cheese, olive oil, lemon juice, and salt in a small food processor. Blend until smooth and creamy.
Reserve Pasta Water:
Before draining the pasta, reserve ½ cup of pasta water.
Combine Pasta and Sauce:
Drain the pasta and add the creamy avocado sauce to the fettuccine. Stir well, ensuring the pasta is evenly coated.
Rest and Serve:
Let the pasta sit, covered, for 5 minutes before serving to allow the flavors to meld.
Notes
