Description
A rich and velvety mushroom sauce envelops tender chicken breasts, creating a comforting and flavorful dinner that’s perfect for any night of the week.
Ingredients
Chicken
- 2 tbsp olive oil
- 4 chicken breasts
- Salt & pepper, to taste
- 1 tsp fresh thyme
Sauce
- 2 cups cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan
Instructions
- Season and sear chicken: Pat the chicken breasts dry, season generously with salt, pepper, and fresh thyme. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
- Sauté mushrooms and garlic: In the same skillet, reduce heat to medium and add the sliced cremini mushrooms. Cook, stirring occasionally, until they release their moisture and begin to brown, about 5-7 minutes. Add minced garlic and sauté for another 1-2 minutes until fragrant.
- Make the sauce: Pour in the chicken broth, heavy cream, and grated Parmesan cheese. Stir well to combine and bring the mixture to a gentle simmer. Let it cook for 5-7 minutes, stirring occasionally, until the sauce thickens to a creamy consistency.
- Finish cooking the chicken: Return the seared chicken breasts to the skillet, nestling them into the creamy mushroom sauce. Spoon some sauce over the chicken and continue cooking for an additional 5 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Notes
- Add fresh spinach during the sauce simmer for added color and extra nutrients.
- Use bone-in chicken breasts for juicier meat; increase cooking time accordingly.
- Substitute heavy cream with half-and-half for a lighter version, but sauce will be less rich.
- Serve over mashed potatoes, rice, or pasta for a complete meal.
