Ingredients

Chicken

  • 4 chicken breasts
  • Salt & pepper, to taste
  • 1 tsp fresh thyme

Sauce

  • 2 cups cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan


Instructions

  1. Season and sear chicken: Pat the chicken breasts dry, season generously with salt, pepper, and fresh thyme. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  2. Sauté mushrooms and garlic: In the same skillet, reduce heat to medium and add the sliced cremini mushrooms. Cook, stirring occasionally, until they release their moisture and begin to brown, about 5-7 minutes. Add minced garlic and sauté for another 1-2 minutes until fragrant.
  3. Make the sauce: Pour in the chicken broth, heavy cream, and grated Parmesan cheese. Stir well to combine and bring the mixture to a gentle simmer. Let it cook for 5-7 minutes, stirring occasionally, until the sauce thickens to a creamy consistency.
  4. Finish cooking the chicken: Return the seared chicken breasts to the skillet, nestling them into the creamy mushroom sauce. Spoon some sauce over the chicken and continue cooking for an additional 5 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
