Description

This Slow Cooker Chicken Gnocchi Soup is a comforting and hearty meal perfect for chilly days. Packed with tender chicken, creamy broth, savory vegetables, and pillowy gnocchi, this recipe combines ease of preparation with rich flavors achieved through slow cooking. Ideal for a cozy family dinner, it requires minimal prep and yields a deliciously satisfying soup with a creamy texture and plenty of wholesome ingredients.

Ingredients

Soup Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 2 cups fresh spinach

Creamy Base

  • 1 cup heavy cream
  • 8 oz cream cheese, softened and cubed

Additional Ingredients

  • 1 package (16 oz) potato gnocchi
  • 2 tbsp olive oil or butter

Instructions

  1. Prepare the slow cooker: Add the chicken breasts, diced onion, minced garlic, carrots, celery, chicken broth, thyme, basil, salt, and pepper into the slow cooker. Stir gently to combine all ingredients evenly.
  2. Cook the chicken and vegetables: Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fully cooked and vegetables are tender.
  3. Shred the chicken: Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken back into the pot and stir.
  4. Add the creamy elements: Stir in the cream cheese cubes and heavy cream until the cheese is melted and the soup is creamy and smooth. Mix thoroughly to combine.
  5. Cook the gnocchi: Turn the slow cooker to high heat, then add the potato gnocchi. Cover and cook for an additional 15-20 minutes until the gnocchi are tender and cooked through.
  6. Finish with spinach: Stir in the fresh spinach and allow it to wilt for about 5 minutes before serving. Adjust seasoning with additional salt and pepper if needed.
  7. Serve and enjoy: Ladle the soup into bowls and serve warm. Optionally, garnish with fresh herbs or grated Parmesan cheese for extra flavor.

Notes

  • You can substitute chicken thighs for a juicier texture.
  • If you prefer a thicker soup, add a slurry of cornstarch and water during the last 15 minutes of cooking.
  • For a lower-fat version, use half-and-half instead of heavy cream and reduce the cream cheese amount.
  • Gnocchi can be store-bought or homemade based on preference.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
  • To reheat, warm gently on the stovetop to prevent curdling.
