Instructions
- Sauté Onions: Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent and soft, about 5 minutes.
- Add Garlic: Add the minced garlic to the pot and cook for an additional 30 seconds until fragrant, being careful not to burn it.
- Simmer Broth: Pour in the chicken broth and bring it to a boil over medium-high heat.
- Cook Tortellini: Add the cheese tortellini to the boiling broth and cook according to package instructions, usually about 3 to 5 minutes, until tender.
- Add Cream and Spinach: Stir in the heavy cream, fresh spinach, and Italian seasoning. Reduce heat to medium-low and let the soup simmer gently for 3 to 4 minutes, allowing the spinach to wilt and the flavors to meld.
