Description

A rich and comforting Italian-American soup featuring tender cheese tortellini, fresh spinach, and a creamy broth infused with garlic, onion, and Italian herbs. This easy stovetop soup is perfect for cozy family dinners and combines delightful flavors with simple preparation.

Ingredients

Sauce Base

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced

Soup

  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 (9-ounce) package cheese tortellini
  • 1 cup fresh spinach
  • 1/2 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Sauté Onions: Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent and soft, about 5 minutes.
  2. Add Garlic: Add the minced garlic to the pot and cook for an additional 30 seconds until fragrant, being careful not to burn it.
  3. Simmer Broth: Pour in the chicken broth and bring it to a boil over medium-high heat.
  4. Cook Tortellini: Add the cheese tortellini to the boiling broth and cook according to package instructions, usually about 3 to 5 minutes, until tender.
  5. Add Cream and Spinach: Stir in the heavy cream, fresh spinach, and Italian seasoning. Reduce heat to medium-low and let the soup simmer gently for 3 to 4 minutes, allowing the spinach to wilt and the flavors to meld.
  6. Finish and Season: Stir in grated Parmesan cheese, then season the soup with salt and black pepper to taste. Serve the soup warm for best flavor and texture.

Notes

  • For a lighter version, substitute half-and-half or milk for the heavy cream.
  • Add cooked sausage or grilled chicken for extra protein and heartiness.
  • Best enjoyed fresh, as the pasta may absorb the broth and change texture when stored.
