Ingredients

3 boneless, skinless chicken breasts (about 1.5 lbs), diced

1 cup orzo pasta

2 cups fresh spinach

1/2 cup sun-dried tomatoes (packed in oil), chopped

1 cup heavy cream

3 cloves garlic, minced

2 cups low-sodium chicken broth

Salt and pepper to taste

2 tbsp olive oil


Instructions

Prepare the ingredients:
Dice the chicken into bite-sized pieces. Mince the garlic and chop the sun-dried tomatoes.

Cook the chicken:
Heat olive oil in a large skillet over medium heat. Add the diced chicken and sauté until golden brown and cooked through, about 5-7 minutes. Season with salt and pepper.

Sauté the garlic and sun-dried tomatoes:
Add minced garlic to the skillet and sauté until fragrant, about 1 minute. Stir in the chopped sun-dried tomatoes and cook for another minute.

Add the broth and cook the orzo:
Pour in the chicken broth and bring to a boil. Stir in the orzo pasta, reduce the heat to low, cover, and simmer for 10-12 minutes, until the orzo is al dente.

Make the sauce:
Stir in the heavy cream and fresh spinach. Continue to cook until the spinach is wilted and the sauce has thickened.

Serve:
Serve the dish hot, garnished with extra sun-dried tomatoes, if desired.
