Description

Creamy white wine chicken with mushrooms is an elegant yet easy skillet dinner made with tender chicken, sautéed mushrooms, and a rich, velvety wine-infused cream sauce. Perfect for weeknights or special occasions, this Italian-inspired dish combines simple ingredients to create a flavorful and satisfying meal.

Ingredients

Chicken

  • lbs boneless, skinless chicken breasts or thighs
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

Sauce & Vegetables

  • 2 tablespoons butter
  • 8 oz mushrooms, sliced (button or cremini)
  • 3 cloves garlic, minced
  • ½ cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • ¾ cup heavy cream
  • ½ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon fresh parsley or thyme, chopped

Optional for Serving

  • Pasta, rice, mashed potatoes, or crusty bread

Instructions

  1. Season the Chicken: Season chicken on both sides with salt, pepper, and Italian seasoning to ensure flavor penetration.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 4–5 minutes per side until golden brown and cooked on the outside. Remove chicken and set aside.
  3. Sauté the Mushrooms: Reduce heat to medium and add butter to the skillet. Add sliced mushrooms and sauté for 5–7 minutes until browned and moisture has released, developing deep flavor.
  4. Add Garlic: Add minced garlic to mushrooms and cook for 30 seconds until fragrant, taking care not to burn the garlic.
  5. Deglaze with Wine: Pour in the dry white wine and simmer for 2–3 minutes while scraping up any browned bits from the pan to incorporate flavor into the sauce.
  6. Add Broth and Cream: Stir in chicken broth and heavy cream, bringing the mixture to a gentle simmer to thicken and meld the flavors.
  7. Add Parmesan Cheese: Incorporate freshly grated Parmesan cheese and stir until melted and the sauce is smooth and creamy.
  8. Simmer with Chicken: Return the seared chicken to the skillet and simmer for 8–10 minutes, allowing the chicken to cook through in the creamy sauce while it thickens.
  9. Adjust & Garnish: Taste the sauce and adjust seasoning as needed. Garnish with fresh parsley or thyme and serve warm with your choice of pasta, rice, mashed potatoes, or crusty bread.

Notes

  • Use a dry white wine you’d enjoy drinking, such as Sauvignon Blanc or Pinot Grigio, for the best flavor.
  • For a thicker sauce, simmer uncovered for a few extra minutes to reduce excess liquid.
  • Chicken thighs offer extra juiciness and flavor, while breasts provide a leaner option.
  • Leftovers store well in the refrigerator for up to 4 days and reheat gently to preserve the creamy texture.
