Instructions
- Prepare the Ground Beef: In a large skillet over medium heat, brown the ground beef until fully cooked and no longer pink, breaking it apart as it cooks. Drain excess fat if necessary.
- Combine Ingredients in Crockpot: Transfer the cooked beef to the slow cooker. Add the black beans, diced tomatoes with green chilies, chopped onion, taco seasoning, beef broth, and a pinch of salt and pepper. Stir well to combine all ingredients.
- Cook the Stew: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. This slow cooking allows flavors to meld and the onions to soften.
