Description

Tender, bakery-style muffins bursting with apple chunks, cinnamon, and a hint of vanilla — made extra moist with creamy Greek yogurt. These Apple Cinnamon Greek Yogurt Muffins are a wholesome, irresistible breakfast treat.


Ingredients

For the Muffins:

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tsp ground cinnamon
  • ¼ tsp nutmeg (optional)
  • ¼ tsp salt
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • ⅓ cup melted butter or coconut oil
  • ¾ cup Greek yogurt (plain or vanilla)
  • 1 tsp vanilla extract
  • 1 ½ cups diced apples (peeled and chopped, about 2 medium)

Optional Topping:

  • 2 tbsp brown sugar
  • ¼ tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a medium bowl, whisk eggs, sugars, melted butter, Greek yogurt, and vanilla until smooth.
  4. Add wet ingredients to dry ingredients and mix until just combined (do not overmix).
  5. Fold in diced apples.
  6. Divide batter evenly among muffin cups (about ¾ full).
  7. If desired, sprinkle each with the brown sugar–cinnamon topping.
  8. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in pan 5 minutes, then transfer to a wire rack.

Notes

  • Substitute half whole-wheat flour for extra fiber.
  • Use honeycrisp or gala apples for best texture.
