Ingredients
For the Muffins:
- 1 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 ½ tsp ground cinnamon
- ¼ tsp nutmeg (optional)
- ¼ tsp salt
- ½ cup brown sugar
- ¼ cup granulated sugar
- 2 large eggs
- ⅓ cup melted butter or coconut oil
- ¾ cup Greek yogurt (plain or vanilla)
- 1 tsp vanilla extract
- 1 ½ cups diced apples (peeled and chopped, about 2 medium)
Optional Topping:
- 2 tbsp brown sugar
- ¼ tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin pan.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a medium bowl, whisk eggs, sugars, melted butter, Greek yogurt, and vanilla until smooth.
- Add wet ingredients to dry ingredients and mix until just combined (do not overmix).
- Fold in diced apples.
- Divide batter evenly among muffin cups (about ¾ full).
- If desired, sprinkle each with the brown sugar–cinnamon topping.
- Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan 5 minutes, then transfer to a wire rack.
Notes
- Substitute half whole-wheat flour for extra fiber.
- Use honeycrisp or gala apples for best texture.
- Store in an airtight container for 3–4 days, or freeze up to 2 months.
