Description
A creamy and comforting broccoli cheddar soup made with simple ingredients, perfect for a quick and satisfying meal that combines nutritious broccoli with rich cheddar cheese in a smooth, flavorful broth.
Ingredients
Vegetables
- 2 cups broccoli florets
- 1 small onion, chopped
Dairy & Fats
- 2 tablespoons butter
- 2 cups milk
- 1 1/2 cups shredded cheddar cheese
Other
- 2 tablespoons flour
- 1 cup chicken or vegetable broth
- Salt and black pepper to taste
Instructions
- Melt butter: In a pot over medium heat, melt the butter completely to prepare for sautéing the onions.
- Sauté onions: Add the chopped onion to the melted butter and cook until they become soft and translucent, about 3-5 minutes.
- Add flour: Stir in the flour and cook for 1 minute to create a roux, which will help thicken the soup.
- Add liquids: Gradually whisk in the milk and the chicken or vegetable broth, stirring continuously to avoid lumps and ensure a smooth base.
- Simmer broccoli: Add the broccoli florets and let the soup simmer until the broccoli is tender, approximately 10-12 minutes.
- Incorporate cheese: Stir in the shredded cheddar cheese until it melts completely, creating a creamy texture.
- Optional blending: Blend slightly using an immersion blender or regular blender if you prefer a smoother texture, but leaving some broccoli pieces intact adds a nice bite.
- Season and serve: Season the soup with salt and black pepper to taste and serve warm immediately for best flavor.
Notes
- Do not boil the soup after adding the cheese to prevent it from separating and becoming grainy.
- Use sharp cheddar cheese for a stronger, more pronounced flavor.
- Add diced carrots to the soup for extra color and natural sweetness if desired.
