Ingredients
Beef and Seasoning
- 3 lb beef chuck roast
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
Vegetables
- 1 lb baby potatoes
- 4 carrots, chopped
- 1 onion, sliced
- 3 cloves garlic
Liquids
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
Instructions
- Prepare Vegetables: Place the baby potatoes, chopped carrots, sliced onion, and whole garlic cloves in the bottom of the slow cooker, creating a bed for the roast.
- Season the Roast: Rub the beef chuck roast evenly with salt, black pepper, and dried thyme to enhance its flavor.
- Layer the Roast: Place the seasoned beef roast on top of the vegetables in the slow cooker.
- Add Liquids: Pour the beef broth and Worcestershire sauce over the beef and vegetables to provide moisture and flavor during cooking.
- Slow Cook: Cover and cook on low heat for 8 hours or on high heat for 4 to 5 hours until the beef is tender and easily shredded or sliced.
- Serve: Once cooked, slice or shred the beef roast as preferred and serve with the cooked vegetables. Optionally, thicken the cooking juices for a gravy.
