Description

A classic slow-cooked beef roast that is tender, flavorful, and requires minimal preparation. Perfect for an easy family dinner, this recipe combines beef chuck roast with hearty vegetables slow-cooked to perfection in a crock pot.

Ingredients

Beef and Seasoning

  • 3 lb beef chuck roast
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme

Vegetables

  • 1 lb baby potatoes
  • 4 carrots, chopped
  • 1 onion, sliced
  • 3 cloves garlic

Liquids

  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce

Instructions

  1. Prepare Vegetables: Place the baby potatoes, chopped carrots, sliced onion, and whole garlic cloves in the bottom of the slow cooker, creating a bed for the roast.
  2. Season the Roast: Rub the beef chuck roast evenly with salt, black pepper, and dried thyme to enhance its flavor.
  3. Layer the Roast: Place the seasoned beef roast on top of the vegetables in the slow cooker.
  4. Add Liquids: Pour the beef broth and Worcestershire sauce over the beef and vegetables to provide moisture and flavor during cooking.
  5. Slow Cook: Cover and cook on low heat for 8 hours or on high heat for 4 to 5 hours until the beef is tender and easily shredded or sliced.
  6. Serve: Once cooked, slice or shred the beef roast as preferred and serve with the cooked vegetables. Optionally, thicken the cooking juices for a gravy.

Notes

  • For a richer gravy, thicken the cooking juices with cornstarch or flour after cooking.
  • This recipe is ideal for family dinners and feeds 6 to 8 servings.
  • Using a chuck roast makes the meat tender and flavorful due to its marbling and connective tissue.
