Description

Easy Dumpling Soup is a flavorful, quick dish that combines comforting dumplings with aromatic ginger, garlic, and fresh vegetables in a rich chicken stock. This light yet satisfying soup, with tender dumplings and vibrant spinach, is perfect for busy weeknights or whenever you’re craving something comforting and easy to prepare.


Ingredients

  • 1 tbsp sesame oil
  • 2 tbsp minced fresh ginger
  • 4 garlic cloves, minced
  • 6 cups chicken stock
  • 3 tbsp soy sauce
  • ½ bunch green onions, thinly sliced
  • 2 large carrots, julienned (or 1 cup pre-cut)
  • ½ tsp sea salt
  • 1.5 lb bag frozen dumplings (potstickers or mini potstickers)
  • 2 cups fresh spinach, packed
  • 1 tsp sesame seeds (optional)

Instructions

  1. Sauté Ginger and Garlic: Heat sesame oil in a soup pot over medium heat. Add minced garlic and ginger, sauté for about 3 minutes until fragrant.
  2. Add Broth and Vegetables: Add chicken stock, soy sauce, green onions, carrots, and sea salt to the pot. Bring the mixture to a boil.
  3. Cook Dumplings: Once the broth is boiling, add the frozen dumplings (potstickers). Bring the soup back to a boil and cook for 4 minutes, until dumplings are heated through.
  4. Stir in Spinach: Remove the pot from heat and stir in fresh spinach until it wilts.
  5. Serve and Garnish: Serve the soup topped with sesame seeds and additional sliced green onions for extra flavor and garnish.

Notes

  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days.
  • Freezing: Dumpling soup can be frozen for up to 3 months. Remove the dumplings before freezing and store the broth separately. Reheat with fresh dumplings when ready to serve.
