Ingredients
For the Sauce:
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup pumpkin purée (not pie filling)
- ½ cup heavy cream (or half-and-half)
- ¼ cup grated Parmesan cheese
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp nutmeg
- 4 fresh sage leaves, chopped (plus extra for garnish)
For the Gnocchi:
- 1 lb (450 g) store-bought or homemade gnocchi
- 1 tbsp olive oil or butter (for finishing)
Instructions
- Cook the Gnocchi: Bring salted water to a boil, add gnocchi, and cook until they float (2–3 minutes). Drain and set aside.
- Make the Pumpkin Sauce: In a skillet, melt butter over medium heat. Add garlic and sage; sauté for 30 seconds until fragrant. Stir in pumpkin purée, cream, Parmesan, salt, pepper, and nutmeg. Whisk until smooth and slightly thickened (about 3–4 minutes).
- Combine: Add cooked gnocchi to the sauce, tossing gently to coat. Warm through for 1–2 minutes.
- Serve: Drizzle with a bit of olive oil or brown butter, sprinkle with extra Parmesan and sage, and enjoy immediately.
